Season the pork with 1/2 tsp salt, pepper, paprika, and garlic powder.
In a large skillet, heat 1 tbsp oil over medium heat. Swirl oil to coat skillet and cook pork for at least 2 minutes on each side or based on your preferred doneness. Remove from pan.
In the same pan, add the remaining oil. Add apples and 1/2 cup water. Cook for about 6 minutes, covered, or until the apples are tender.
Season the apples with salt, sugar, and cinnamon. Cook uncovered for 2 minutes, stirring occasionally, or until the apples soften and most of the liquid has evaporated and become syrupy.
Serve the pork with the applesauce mixture and garmish with freshly chopped parsley.
