In a bowl, combine the eggs, salt, and pepper.
On a rimmed plate or shallow bowl, combine the flour and 1/2 cup cornstarch.
Dip each piece of chicken in the egg mixture first then in the flour mixture.
Preheat oven to 400°F.
Get your cooling rack and apply cooking spray then place it on top of the baking pan. Arrange the chicken pieces on the cooling rack without touching and spray evenly with cooking spray on both sides. Cook for 20 to 25 minutes or until crispy.
In the meantime, get a bowl and mix the honey, soy sauce, rice vinegar, ketchup, brown sugar, sesame oil, and 2 teaspoons of cornstarch.
Heat a teaspoon of oil in a skillet and add the garlic. Cook for about 30 seconds. Add the honey mixture, let it simmer and cook for 3 to 4 minutes.
When the chicken is cooked, toss it in the honey sauce and coat evenly. Sprinkle with sesame seeds and green onions before serving.
