Homemade Three Bean and Beef Chili Recipe

Ingredients

  • 1 lb extra lean ground beef
  • 1 tbsp olive oil
  • 1 piece onion diced
  • 1 piece red bell pepper diced
  • 2 pieces carrots diced
  • 2 tsp ground cumin
  • 1 can crushed tomatoes 28-oz
  • 2 cups water
  • 1 chipotle chili in adobo sauce seeded and minced
  • 2 tsp adobo sauce from chipotle
  • 1/2 tsp dried oregano
  • salt to taste
  • freshly ground black pepper to taste
  • 1 can black beans 15.5 oz, rinsed and drained
  • 1 can kidney beans 15.5 oz, rinsed and drained
  • 1 can pinto beans 15.5 oz, rinsed and drained

Instructions

  • Get a large pot or Dutch oven. Heat some oil over medium heat.
  • Add the onions, carrots, bell pepper and cook for 10 minutes until softened.
  • Add cumin and stir-fry for a minute.
  • Add the ground beef and increase the heat to high. Cook until the meat is no longer pink. Make sure to break up the beef with a wooden spoon to avoid clumping.
  • Add the tomatoes, chipotle, adobo sauce, and oregano. Season with salt and pepper.
  • Simmer for 30 minutes, partially covered, stirring occasionally.
  • Add the beans and cook for another 20 minutes, stirring occasionally. Season with salt and pepper as desired.
