Bacon Wrapped Jalapeno Appetizers

  • 1/2 cup cream cheese
  • 1 cup diced or shredded leftover chicken breasts or thigh fillets
  • 1/2 cup shredded sharp Cheddar cheese
  • 12 pieces jalapeno peppers, halved lengthwise seeds and membranes removed
  • 12 slices bacon


  • Preheat the oven to 400 degrees F.
  • Line a baking rack with parchment paper.
  • In a bowl, combine the chicken, cheddar, and cream cheese. Mix well.
  • Stuff the jalapenos with the cheese mixture.
  • Seal the jalapenos by wrapping each with a slice of bacon. Secure with a toothpick as needed.
  • Brush the oven rack with olive oil. Arrange the bacon wrapped jalapenos on the oven rack and place on top of the baking sheet.
  • Bake for 15 minutes or until the bacon is crispy.
