Grilled Fish Mahi-Mahi
This recipe for grilled fish is perfect for summer barbecue grilling. You don't have to dine out to enjoy restaurant-quality food. Heat up the grill and start grilling!

Mahi-mahi fish fillets, whole
skin and scales left on
salt for rubbing
vegetable oil for greasing fish
Place the mahi-mahi fillets on a baking pan and rub salt all over. Keep refrigerated for 30 minutes.
Brush the oven racks with vegetable oil. Preheat the grill to 200-250 degrees F.
Bring out the mahi-mahi and oil the flesh side of the fish.
Rub the barbecue sauce on the flesh side of the fish and season with some black pepper.
Arrange the fish skin-side down on the oven rack.
Grill for 45 minutes and baste with the barbecue sauce 30 minutes into cooking. No need to flip.
Squeeze some lemon juice on top before serving.
You can use other fish such as tuna, bluefish, king mackerel, amberjack, seabass, or snapper.
