Zucchini and Bacon Pasta Bake

This one-pan pasta bake is the answer to your cooking woes.

  • 1 lb penne pasta or fusilli pasta
  • 1 cup cream
  • 1 cup cheddar cheese
  • 1 cup parmesan cheese
  • 1 tbsp butter
  • 1 small bunch freshly chopped basil you can also use 1 tsp dried basil
  • 1 red pepper cut into strips
  • 1 zucchini diced or sliced into thin pieces
  • 4 - 5 strips bacon
  • 2 cloves garlic crushed
  • 2 tbsp olive oil
  • salt and pepper to taste


  • Preheat oven to 350°F.
  • Cook pasta according to package directions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Stir fry the garlic. Add zucchini and peppers and stir fry for about 12 to 15 minutes. Remove from pan and set aside.
  • In the same pan, cook the bacon slices 2 minutes on each side. Remove from heat and chop. Set aside on paper towels to absorb excess oil.
  • Melt butter in a sauce pan. Add the cream and bring to a soft bowl. Reduce heat to low. Add 1/2 cup grated cheddar and 1/2 cup parmesan cheese. Season with salt and pepper. Add the fresh/dried basil.
  • Transfer the cooked pasta in the roaster pan. Add the chopped bacon and vegetables. Pour the sauce and mix. Add the rest of the grated cheddar and parmesan on top.
  • Bake for 20 to 25 minutes or until cheese becomes melted and bubbly. Serve with toasted bread or a side salad.
