Walnut Zucchini Muffins
Ingredients
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 2/3 cup packed brown sugar
- 2 tsp baking powder
- 3/4 tsp ground cinnamon
- 1/2 tsp salt
- 2 large eggs at room temperature
- 3/4 cup 2% milk
- 1/2 cup butter melted
- 1 cup zucchini shredded
- 1 cup walnuts chopped
- 1/2 cup raisins
Instructions
- Preheat oven to 375°F.
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, brown sugar, baking powder, ground cinnamon, and salt.
- In another bowl, combine the eggs, milk, and melted butter. Whisk until well blended. Add this to the flour mixture and mix until all ingredients are moistened.
- Fold in the walnuts, raisins, and zucchini.
- Get a muffin pan and fill it with the muffin mixture until 3/4 full. Bake for 18 to 20 minutes. To test, insert a toothpick in the middle; if it comes out clean, the muffins are ready.
- Cool the muffins for 5 minutes then transfer to a cooling rack.
