Another Quick and Easy Asian Meal: Vegetarian Tofu Soba Noodles Recipe

I have always been a noodle and pasta person. Rice, I can live without, but noodles and pasta are a staple. Noodles are also a versatile ingredient. You can use them in soup, ramen, and stir fry dishes. Pair them with chicken, pork, fish, and veggies and they will taste just as good. One of my favorite noodle dishes is this soba noodles recipe with tofu.

As always, you can be creative with the ingredients in this Vegetarian Tofu Soba Noodles recipe. This recipe is good for vegetarians; but if you’re not, you can add your meat of choice. You can also swap the cabbage for bok choy. Another option is to use shrimp instead of tofu. This is also a very easy recipe that you can make in just 20 minutes. So if you’re craving for some Chinese noodles, you can simply make it in the comforts of your home. Healthier and cheaper, too!

Soba noodles are not just versatile but they are healthier than most noodles. Authentic Japanese soba noodles are made from buckwheat but some manufacturers also add flour to it. They look like like spaghetti but taste different. Thus, you can also use soba noodles for your pasta dishes.

A serving of soba noodles contains manganese and thiamine. They are also a good source of soluble fiber and protein which are essential in weight loss. In addition, soba noodles are low in fat, prebiotic, and gluten-free.

How to Cook Soba Noodles

Tofu and soba noodles are perhaps the best combination. Like spaghetti and meatballs. Make sure not to overcook soba noodles or they will become soggy. You cook them just like you cook pasta — boil, rinse, and drain. When using soba noodles for stir fry, boil them for just a minute then add them to the stir fry later. This way, they don’t get overcooked.

Another tip is to pour your base sauce over the soba noodles, like in this recipe. When you add the soba noodles to the sauce, the flavors may not be absorbed well. It is better to add the noodles first then pour the sauce and toss lightly.

To use soba noodles for ramen, you don’t need to boil them separately. Just prepare the base soup then add the soba noodles during the last few minutes of cooking.

Vegetarian Tofu Soba Noodles Recipe

Ingredients

  • 1 lb soba noodles
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tsp brown sugar
  • 1 tsp sesame seeds
  • 1 tbsp vegetable oil
  • 1 package (140 ounces) firm tofu cut into cubes
  • 2 cups cabbage shredded
  • 1 clove garlic pressed
  • 1 tsp ginger freshly grated
  • 2 green onions thinly sliced
  • crushed peanuts for serving
  • sriracha for serving

Instructions

  • Cook the soba noodles in boiling water for 3 to 4 minutes or according to package directions. Rinse under cold water, drain well, and set aside.
  • In a bowl, combine soy sauce, rice vinegar, sesame oil, brown sugar, and sesame seeds. Set aside for later.
  • In a large skillet, heat vegetable oil over medium high heat. Fry the tofu for 3 to 4 minutes until golden brown. Drain and set aside.
  • In the same skillet, add the garlic and ginger. Stir-fry until fragrant then add the cabbage and cook for a minute.
  • In a serving bowl, add the noodles then toss in the soy sauce mixture. Top with cabbage and tofu. Serve with green onions, crushed peanuts, and sriracha as desired.
