This weekend is Father’s Day! This year’s Father’s Day is something unique and special for the family due to 2 reasons: First, we have just moved in to a new house. Second, it will be just the family in an intimate celebration at home because it’s safer. Therefore, I have decided on a special feast for us! I will be making some Grilled Fish and oven-baked Bacon Wrapped Jalapeno appetizers! I also stocked up on some cold bottles of beer so my hubby can prop his feet up, enjoy the view, and celebrate a well-deserved Father’s Day. You see, this month has been really hectic for us: pandemic going on, leaving his job, and moving to a new place. Well, at least in our new home, it’s gonna be a new environment.

Have you ever wondered why spicy food is so addictive? I cannot get over the fact why these Bacon Wrapped Jalapeno appetizers are such a hit. No matter how much you consume, you still have an appetite left. So, I did some research and found out what the culprit it – Capsaicin. It triggers your brain into thinking that there is something hot in your mouth. Also, spicy food triggers our adrenaline. Eating spicy food triggers the pain receptors in our mouth, sort of like masochism, if you think about it. Ever wondered why people love gory movies and action movies? That’s exactly how capsaicin or spicy food makes us feel.

How to Make Bacon Wrapped Jalapeno in Oven
Instead of the usual fried bacon wrapped jalapeno, this version that I found from AllRecipes requires cooking it in the oven. I had a chance to make this recipe a few weeks back and hubby loved it! The spiciness of the jalapeno with that cheese and crispy bacon was the perfect pair to ice cold beer! So, I readied the ingredients, brought out my baking rack, oven preheated, and let’s get started!
There are also different variations to this bacon wrapped jalapeno baked in the oven. You can stuff the bacon jalapeno poppers with chicken before wrapping them in bacon. Another twist would be to stuff chicken breasts with jalapeno and cheese, just like the Keto Bacon Wrapped Chicken recipe. What I did was use the leftover chicken breasts that I roasted, cut them up into chunks, and mixed them with the cheese. Another version is to baste it with barbecue sauce and smoke it in the grill instead of using a baking rack in the oven.
However way you want to cook it, the combination of bacon, jalapeno, and cheese will certainly be a hit especially if it’s made with love.

Bacon Wrapped Jalapeno Appetizers
Equipment
- baking rack
- roasting rack
- parchment paper
- oven
Ingredients
- 1/2 cup cream cheese
- 1 cup diced or shredded leftover chicken breasts or thigh fillets
- 1/2 cup shredded sharp Cheddar cheese
- 12 pieces jalapeno peppers, halved lengthwise seeds and membranes removed
- 12 slices bacon
Instructions
- Preheat the oven to 400 degrees F.
- Line a baking rack with parchment paper.
- In a bowl, combine the chicken, cheddar, and cream cheese. Mix well.
- Stuff the jalapenos with the cheese mixture.
- Seal the jalapenos by wrapping each with a slice of bacon. Secure with a toothpick as needed.
- Brush the oven rack with olive oil. Arrange the bacon wrapped jalapenos on the oven rack and place on top of the baking sheet.
- Bake for 15 minutes or until the bacon is crispy.
