- 4 (1 ounce) squares unsweetened chocolate chopped
- 1 cup semi-sweet chocolate chips
- 6 tbsp butter
- 3 eggs
- 1 cup white sugar
- 1 1/2 tsp vanilla extract
- 1/2 cup all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- There are 2 ways to melt the chocolate. You can either melt the ingredients in the microwave for a few minutes, or place a glass bowl over a pan of simmering water. Mix 1 cup of chocolate chips, unsweetened chocolate, and butter. Stir occasionally until smooth and free of lumps.
- Remove from heat and set aside to cool.
- In a large mixing bowl, whip the eggs and sugar for about 2 minutes until pale and thickened. Add the vanilla and chocolate mixture. Mix well to combine.
- In a separate bowl, combine the flour, cocoa, baking powder, and salt. Gradually add to the chocolate mixture. Fold in the remaining chocolate chips.
- Cover the dough tightly with plastic wrap and chill for at least an hour or overnight.
- Preheat oven to 350°F (175°C).
- Line your baking sheet with parchment paper. Roll chilled cookie dough into 1 inch balls and arrange them 2 inches apart on the lined baking sheet.
