30-Minute Pasta with Shrimp and Broccoli Recipe
Ingredients
- 1 tbsp olive oil extra-virgin
- 1 1/2 lb shrimps peeled and deveined
- 12 oz pasta of your choice high-fiber or wheat
- 2 1/4 cups chicken broth
- 1 1/2 lemon juice
- 6 cloves garlic minced
- 4 1/2 cups broccoli florets
- 21 oz diced fire tomatoes drained
- 6 tbsp Parmesan cheese
- salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil over medium-high heat in a large skillet. Season shrimps with salt and pepper. Cook the shrimp for 2 minutes on each side or until it forms a letter C. Set aside.
- In the same skillet, add the garlic, broccoli, chicken broth, and lemon juice. Cook for about 7 minutes or until the broccoli is tender and the broth is reduced to half.
- Reduce heat to low and add shrimps. Add the tomatoes and pasta. Cook for 1 to 2 minutes until warmed through. Sprinkle with Parmesan cheese upon serving.
