Instructions
1. Prep Your Station:
- Preheat your oven to a cozy 375°F (190°C).
- Line a 12-cup muffin tin with your favorite paper liners.
2. Whisk the Dry:
- In a big bowl, vigorously whisk together the flour, baking soda, baking powder, all those glorious spices (cinnamon, ginger, nutmeg, cloves), and salt. Set it aside for a moment.
3. Combine the Wet:
- In another large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until they're nicely combined.
- Crack in your eggs, one at a time, whisking well after each addition until the mixture is smooth and luscious.
- Stir in the vanilla extract, pumpkin puree, and milk until just combined.
Marry Wet & Dry:
- Gradually add your dry ingredient mixture to the wet mixture. Mix gently until just combined. A golden rule here: do NOT overmix! A few small lumps are perfectly fine and actually help keep your muffins tender. Overmixing can lead to tough muffins.
5. Bake 'Em Up!
- Divide the batter evenly among your prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let them cool in the tin for a few minutes. Transfer to a cooling rack.
6. Frosting Frenzy! (Vanilla Cream Cheese Frosting):
- In a large bowl, using your trusty electric mixer, beat the softened cream cheese and butter together until they're wonderfully smooth and creamy (about 2-3 minutes).
- Gradually add the sifted powdered sugar, one cup at a time. Start on low speed until combined, then crank it up to medium-high and beat until the frosting is light, fluffy, and utterly irresistible.
- Stir in your vanilla extract. Pro Tip: If your frosting is a bit too thick for piping, add milk or cream one tablespoon at a time until you hit that perfect consistency. Too thin? Add a little more sifted powdered sugar!
- Once your muffins are completely cool, prepare your frosting bag and decorate the muffins according to preference.
For Adorable Ghost Cupcakes
- Pipe a swirly peak of white frosting on top, then gently press in two mini chocolate chips or candy eyeballs for that classic spooky stare.
For Grinning Pumpkin Cupcakes:
- Scoop some frosting into a separate bowl and tint it vibrant orange with gel food coloring.
- Pipe the orange frosting onto your muffins.
- Use a tiny bit of black food coloring (or melted chocolate in a piping bag with a tiny snip!) to draw simple jack-o'-lantern faces, or simply scatter some festive Halloween sprinkles!
For Spooky Bat Cupcakes:
- Tint a portion of frosting black.
- Pipe the black frosting onto cupcakes.
- Press two regular-sized chocolate chips into the frosting on either side to create cute little bat wings.
