Easy Sheet Pan Salmon with Roasted Veggies

  • 1 aluminum sheet pan
  • 1 precut parchment paper sheet


  • 3 tbsp avocado oil or olive oil
  • 1/4 cup juice of 1 lemon
  • 2 cloves garlic finely minced
  • 1 tbsp fresh dill
  • 1/2 tsp fine salt
  • 1/4 tsp black pepper
  • 1 1/4 lb salmon fillets
  • 1/2 small red onion thinly sliced
  • 1/2 lemon thinly sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup sliced carrots


  • Preheat the oven to 425°F. Line your baking sheet pan with parchment paper.
  • In a small bowl, make the marinade by combining oil, lemon juice, garlic, dill, salt, and pepper.
  • Reserve 2 tablespoons of the marinade.
  • In a shallow dish, arrange the salmon fillets and pour half of the remaining marinade (not including the 2 tablespoons). Cover and refrigerate.
  • Arrange the veggies on the prepared baking pan and drizzle with the remaining half of the marinade. Toss lightly to combine. Bake for 5 minutes.
  • Remove the pan with the veggies from the oven and make space in the middle for the salmon. Arrange the salmon slices in the center and drizzle everything with the 2 tablespoons of marinade that you set aside. Top the salmon with lemon slices and sprinkle salt and pepper. Bake for 10 to 15 minutes or until the salmon is no longer pink and turns opaque.
