Creamy Apple Salad
Ingredients
- 2 cups green apples such as Granny Smith or Golden Delicious Apples unpeeled and diced
- 2 cups red apples such as Red Delicious, Gala, Honeycrisp unpeeled and diced
- 1/4 cup golden raisins
- 1 tbsp apple juice you can also use orange juice or lemon juice
- 1/2 cup Greek-style yogurt you can also use plain yogurt with a dash of vanilla extract
- 1/4 cup light mayonnaise
- 1/2 tsp apple spice you can also use 1/4 tsp of nutmeg and 1/4 tsp of cinnamon
- 1/4 cup chopped toasted pecans
- 1/4 cup unsweetened shredded coconut
Instructions
- In a medium bowl, combine apples, juice, and raisings.
- In another bowl, combine yogurt, mayo and spices.
- Mix the yogurt mixture with the apple mixture. Refrigerate until ready to serve.
- Serve with coconut and nuts before serving.
