Ingredients

  • 1 cup all-purpose flour
  • 3 tbsp unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup margarine
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cup rolled oats
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C).
  • Line the cookie sheets with parchment paper.
  • In a large mixing bowl, combine the dry ingredients -- flour, cocoa, baking powder, baking soda, cinnamon, and salt. Set aside.
  • In another mixing bowl, add the margarine, white sugar, and brown sugar. Beat with an electric mixer until light and fluffy. Add the egg and vanilla.
  • Gradually add the flour mixture to the sugar and egg mixture. Use a wooden spoon or spatula to mix the ingredients. Add the chocolate and oats and mix well to combine.
  • Spoon the cookie dough on the prepared baking sheets, leaving about 2 inches of space in between.
  • Bake in the preheated oven for 8 to 10 minutes until the edges are golden.
  • Once done, remove the pan from the oven and let it cool for about a minute. Transfer to a cooling rack to cool completely.
