Days come and go now and you don’t even realize it’s already the weekend. I’ve been working from home for quite some time now so this quarantine is not much different. The only difference is that I avoid going out even to buy groceries. I think I’ve stocked up our pantry for the next three months. Anyway, I believe today is the perfect day to enjoy the outdoors and use the BBQ grill! I can already smell the smoky barbecue wafting through our backyard… yummy!
Bring Out the BBQ Grill!
I asked the boys to bring out our RecTec grill and prepare it. When they realized that we were gonna have a barbecue outdoors, they set off to arrange the dining table. I guess they are really bored now and any new activity seems like a big break. This is definitely something good about this quarantine — the boys are becoming more involved in house work.
I readied the chicken pieces so that it can marinate well before putting them on the grill. Oh, before I forget…would you love to win your very own RecTec grill? For this recipe, I used McCormick’s Grill Mates Smokehouse Mesquite Single Use Marinade. Since it was still early, I marinated the chicken pieces, covered them and placed them in the fridge where they can marinade for 2 hours. Would have been better to marinate them overnight but we couldn’t wait for tomorrow to have a barbecue!
You can also throw in some pork to grill while you’re at it. Last time we did this, I also grilled some pork tenderloin and used the meat for this Mesquite Pork Fajitas. You can also use chicken, too!
Anyway, the chicken is ready and hubby already prepared the garden salad. Time to get grilling!
