More and more people are getting an air fryer this year. For one, cooking meals via air fryer is so easy. Plus, if you want to eat crispy yet oil-free food, then an air fryer is your best bet. When I’m too lazy to cook anything, I opt for the air fryer. Cooking in the oven is easy, too, but an air fryer is smaller and easier to clean. With round perforated parchment paper sheets, I can line my air fryer, use it to cook, then just wipe it off after use. I mostly cook air fryer recipes for chicken as it seems to produce the best flavor.
Instead of the usual taco Tuesday, I decided that we have taquitos instead of tacos. Taquitos are actually just rolled up tacos. They’re easier to eat, too. Corn tortillas taste better with taquitos but you can also use flour or wheat tortillas. I was actually looking for some air fryer recipes for chicken and came across this Spicy Chicken Taquitos recipe.
The great thing about this recipe is that you can opt to cook it in the air fryer or in the oven. In both methods, parchment paper sheets are the perfect kitchen tool to save cleaning time. Parchment paper also works wonders in protecting cookware and bakeware. If you are cooking different dishes in the air fryer, you just need to replace the parchment paper with a new one then cook the next dish.
Air Fryer Chicken Recipe: Spicy Taquitos
I taught my sons to make food for themselves so they won’t go hungry when I get sick or when I am busy. I don’t believe that only women should be allowed in the kitchen. In our present time, both men and women, regardless of age, should learn to do housework and cook food for themselves. That’s how people survive, right? We should teach our children, at a young age, to be independent.
Anyway, I think I have already rolled up about 2 dozen taquitos! I just placed the first batch in the air fryer and just a few more minutes until they’re cooked. Remember I told you I’ve started with intermittent fasting? Well, this snack is also my dinner. Better to binge on healthy food before fasting. I’ve been doing this for a week, and it is challenging but doable.

Spicy Chicken Taquitos
Equipment
- air fryer
- round perforated parchment paper sheets
Ingredients
- cooking spray
- 3 cups cooked chicken shredded
- 1 block (8-oz) cream cheese softened
- 1 piece chipotle in adobo sauce chopped
- 1 tbsp chipotle adobo sauce
- 1 tsp cumin
- 1 tsp chili powder
- Kosher salt
- freshly ground black pepper
- 12 pieces corn or flour tortillas
- 1.5 cup cheddar cheese shredded
- 1.5 cup Pepper Jack cheese shredded
- Pico de Gallo for serving
- crumbled queso fresco for serving
For the avocado cream sauce:
- 1 piece large avocado pitted
- 1/2 cup sour cream
- 1/4 cup packed cilantro leaves
- 1 clove garlic
- juice of 1 lime
- Kosher salt
- freshly ground black pepper
Instructions
- In a large mixing bowl, mix the chicken with the cream cheese, chipotle and sauce, chili powder and cumin. Season with salt and pepper then mix well to combine.
- Microwave the tortillas for 30 seconds covered with a damp paper towel.
- Spoon the chicken mixture into each tortilla. Sprinkle with cheddar and Pepper Jack cheese. Roll tightly.
- Place a round parchment paper sheet in your air fryer. Place the tortillas, seam side down, in the basket. Cook at 400° for about 7 minutes.
- While the taquitos cook, make the avocado cream sauce. In a food processor, just combine all ingredients until creamy. Transfer contents to a bowl, cover with a plastic wrap and refrigerate until ready to serve.
For oven baking:
- Preheat oven to 425°F.
- Follow steps 1 to 3. Place parchment paper on a baking sheet and arrange the tortillas on it, seam side down.
- Bake for 15 to 20 minutes or until golden brown.
