Vegetarian Baked Gnocchi Easy Recipe
Ingredients
- 4-5 cups broccoli cut into florets
- 1 package gnocchi 16 oz
- 1 can cannellini beans 15 oz, rinsed and drained
- 1 jar tomato sauce 24 oz
- 1 cup grated cheese divided
- salt and black pepper to taste
Instructions
- Preheat oven to 400 degrees F.
- Blanch the broccoli florets in boiling water for about 2 minutes.
- Add the gnocchi to the same pot and cook for 4 to 5 minutes or until the gnocchi floats to the top.
- Drain the gnocchi and broccoli. Return to the pot then add the tomato sauce, cannellini beans, and 1/4 cup cheese. Season with salt and pepper to taste. Stir to combine and heat through.
- Prepare a large baking dish and spread the gnocchi on it. Sprinkle with the remaining cheese on top.
- Bake for 15 to 20 minutes until the cheese is melted and bubbly.
