Ever had one of those days when friends or family drop by unannounced and you don’t have anything to serve?
That happened to me once. It was NBA season and suddenly friends decided they would drop by to watch the game with us. I had about an hour to prepare, which included taking a shower.
I found this recipe online and decided to prepare it since we had so much asparagus left. We never run out of bacon or prosciutto, too!
This recipe is so easy to prepare. Just put them together and threw them in the oven while I showered.
- 1 lb thick asparagus spears
- 1 tbsp olive oil
- 1/8 tsp salt
- 1/8 tsp freshly ground black pepper
- 1/2 lb thinly sliced prosciutto or bacon
How to make them:
First, I washed and cut off the tough ends of the asparagus. As I preheated the oven to 425 degrees F, I started wrapping the asparagus in prosciutto. You can wrap 1 prosciutto per asparagus, but since I was in a hurry, I took 3 asparagus spears and wrapped them in 2 strips of prosciutto. As a tip, start wrapping from the bottom, spiraling to the tip.
I brought out my baking pan and lined it with aluminum foil. I arranged the prosciutto on the roasting rack, drizzled olive oil, seasoned it with salt and pepper, placed it in the oven and baked it for 5 minutes since the asparagus spears are thin. For thicker asparagus spears, bake them for about 10 minutes.
The asparagus and prosciutto were done when I got out of the shower. Everyone gathered in front of the television and I brought out the freshly cooked asparagus and prosciutto. Everyone turned around to welcome the delicious smell!
