These freezer meals come in very handy on lazy days or when I don’t feel well enough to cook. But on some days, I just come up with something really easy such as this easy chicken recipe — Asian Teriyaki Chicken.

Yup, you read it right! This recipe takes only 10 minutes to cook with just 10 ingredients! I taught my middle son to cook this and he was so proud of himself that he offered to cook lunch the next day! Guess we’ll have to eat chicken teriyaki everyday. Well, this is a great recipe for those who are just learning how to cook. You can substitute the chicken with other proteins such as beef, pork, or fish. You can even use tofu if you’re on the vegan diet.

Asian Chicken Teriyaki
- 4-5 pieces chicken breast or thigh fillets cut into strips
- 4 1/2 cups steamed broccoli
- 1 1/2 tbsp oil
For the Teriyaki Sauce:
- 1/4 cup low-sodium soy sauce
- 4 1/2 tbsp coconut sugar
- 1 1/2 tbsp sesame oil
- 1 1/2 tsp grated fresh ginger
- 3 tsp cornstarch
- 3 cloves garlic minced
- sesame seeds for garnish
- In a small bowl, combine all ingredients for the teriyaki sauce. Set aside.
- Heat some oil over medium heat and brown the chicken.
- When the chicken is cooked, add the teriyaki sauce and cook for 1 to 2 minutes, stirring constantly, until the sauce thickens.
- Add steamed broccoli and heat through. Serve over rice and garnish with sesame seeds.
